Black eyed Pea Slaw

Now that summer is coming to a close, this is one of my favorite recipes we eat almost all year around. It's low in calories, healthy and can be eaten with chips, flat bread or by itself. If you're on a low carb diet, this is perfect.

2 cans of Black eye peas
1 tomato
2 jalapenos
1 stalk of celery
1/2 a red onion
1/4 bunch of cilantro
1/2 of orange pepper
1 lime
1/2 lemon
salt and pepper

Drain and wash the black eyed peas and place in a glass container. Dice the tomato, celery, onion, pepper and mix into the peas. Take the cilantro and gently dice, trying not to bruise it. Lightly roast the jalapenos over a open flame to enhance the heat. Slice open when cool and remove the seeds and dice. Squeeze the juice of the lime and 1/2 of lemon over the mixture and mix well.

Mix everything together and add salt and pepper to taste. 

Let set in the frig for 1hour before serving.
