This is not a diet recipe, but it’s so good I had to share. I’ve combined my mother’s recipe with a little updating from me. It’s great for those pot lucks for the summer BBQs.
It takes a little planning, but easy to make.
- 1lb white beans
- 1 ham hock (score the top for flavor)
- 4 slices of bacon (diced)
- 1 red onion (diced)
- ¼ cup of honey
- ¼ cup of molasses
- ¼ cup of real maple syrup
- 1tsp of smoked Paprika
- 1tsp of dried mustard
- Salt and pepper to taste when the beans are soft, don’t add any salt during the cooking process.
Place the beans in 8cups of water
and let sit over night. If you don’t do that boil them at a hard boil for
5mins, and let stand in the water for 1 ½ hrs. Strain and reserve all the
water. Place beans in a crock pot, with 5cups of the reserved water. Add the ham hock, score the top so the
flavors cook out, add the diced bacon. Add the diced red onion, and all the
rest of the ingredients. Stir well, and keep the rest of the reserved water for
later.
Put the crock pot on high and let
the beans cook between 3 to 4 hours. If you like you can leave them in there
for the entire cooking time. I then remove the beans, with the ham hock into a shallow
casserole dish, cover and bake in the oven for 2 ½ hrs at 300 degrees.
If the beans seem a little dry at
the time they go into the casserole dish, add some of the reserved water until
it is at the desired consistency.
When you pull the beans out of
the oven, the ham hock should be falling off the bone. I remove the fat and
bone, and cut the meat into my beans. Salt and pepper to taste.
This is an old fashion recipe
that everyone loves. It’s got a little of everything in it.
