Fruity, green healthy salad

I don't have a name for this salad, but I make it year round and it's a meal in itself.  It's so simple. Really healthy. You can add to this also with just about any fruit or berry.


1 skinless chicken breast
BBQ Sauce
Roman lettuce
1 apple
1/2 cup black berries
1/2 cup Pomegranate seeds
1/2 cup chopped walnuts
1/2 golden raisins

Coat chicken in your favorite BBQ sauce, wrap in foil and place on the grill for, 30mins. Unwrap and place the chicken directly on the grill for a few minutes on each side to get a little char. If you don't want to BBQ, this also works in the oven.

Wash veggies and fruit thoroughly. Break lettuce into bite size pieces, slice apple into thin wedges, add black berries, pomegranate seeds, walnuts and raisins. Slice chicken and add.

Dressing:

1/4 cup of stone ground dijon mustard
5tbs of balsamic vingar
1/4 cup Olive Oil
2tbs of honey

The measurements are only a estimate. Add carefully until you get it tasting the way you like it either more tangy or more sweet. But its a great dressing we use all the time. It will last if refrigerated, so I make a container full.
