In the winter time, I love soups. This one is a favorite and so easy to make and healthy!
Lentil Soup
6 slices of bacon, chopped and cooked to crispy
1/2 onion, chopped
2 stalks of celery chopped
1 carrot, sliced and cut into small pieces
2 cloves of garlic chopped
1/2 head of cauliflower, chopped into pieces
1 cup of lentil of any type
1 can of chicken broth
1/4 cup of fresh chopped flat Italian parsley.
1 granin of bouquet, with thyme and rosemary
1 tbl of garlic powder
Salt & Pepper to taste
Cook
bacon, adding onion, celery and garlic. Add carrot ,cauliflower and
lentil. Pour broth over the mixture, then add 2 cans of water. Add
bouquet and garlic powder, stir, cover and let simmer for 1hr. Remove 1
cup of mixture place in a blender and puree. Remove granin and return
puree to soup, it helps thicken. And serve with fresh warm bread.
