This recipe isn't low calorie, but it is one of my families favorite side dishes during the holiday.
Depending
on how many people you're having at your table depends on how many
carrots you use. So I'll go with the recipe that feeds six.
5 lg. Carrots. Big fat carrots
1/2 cup of chopped pecans
1/2 cup of brown sugar
1tbs of cinnamon
2 tbs of coriander
olive oil
3tbs of sweetened butter
Heat oven to 400 degrees.
I like to use parchment paper, but if not, spare a cooking sheet with PAN.
Peel
and cut carrots in half and then into strips. Place in a large bowl and
drizzle with olive oil until covered. Add coriander, and mix will
making sure the carrots are covered well. Spread evenly over the cooking
sheet. Place in the oven for 15 mins. At this time mix the carrots a
bit so they'll roast on all sides. Cook for another 15 mins. or until
fork tender.
When carrots are fork tender remove from
oven. Melt butter in a large frying pan. Add brown sugar, pecans and
cinnamon. Cook until sugar is completely dissolved. Add carrots,
covering well in mixture and let simmer for 10 mins. And serve.
This is a nice sweet delight to the average carrot dish.
