Balsamic Vinegar to taste
½ Red Onion
½ cup Feta Cheese
This is one of the easiest salads that
can be made well ahead. Peel and slice beets into thin pieces. I like to use
thin quarter pieces. Steam, for about 20min. Test with a fork for tenderness.
Drain if there is any water, and place in a glass dish in the refrigerator for
a couple of hours to cool.
Slice the red onion in half and slice
into very thin pieces. Julianne is perfect. Mix in with the beets when they are
cool. Sprinkle with balsamic to taste. I like about ¼ cup. Add feta cheese over
the top, and serve.
This is a light and colorful salad for a
nice warm evening. It is a favorite of my family. I love to bring it to pot
luck barbeques, because no one else will have it.
This will serve four, but the recipe is easily expanded with more beets.
