Chicken, butternut squash and kale





This is a great and easy dish, that does require a little bit of time. It's tasty with a layer of hard to resist flavors.








2 chicken breasts (bone in and skin)
2 cans of chicken broth
1/4 cup of white wine
1 bunch of kale
1 sm butternut squash
1 med. turnip
1/2 red onion
2 diced garlic cloves
salt and pepper
garlic powder


Dice garlic, slice onions and saute together in a dutch oven until onions are clear in olive oil. Salt/pepper and season chicken with garlic powder.  Place chicken in hot pan with onions and garlic and brown skin down.

While the chicken is browning, clean and cut kale into pieces. Remove the stems. Peel the butternut squash and cut into cubes. Peel turnip and slice. 

When the Chicken is brown remove from pan, put aside. Deglaze pan with wine. Allow to cook down slightly for about 5 mins. Add the kale, turnip and butternut squash. Lay chicken on the top, and pour the 2 cans of broth over. Cover and simmer for 1hr.

There will be broth left in the pan after your remove the kale, turnip and squash. It's incredibly wonderful tasting broth full of the flavors of the chicken and vegetables. Save it and use it for soups.
